DB levels How To Set Them

With the AV9000 and Phase Tec Bookshelves, PC3center and CIV6.0 surrounds powered by a HCA1250 5 channel amp what is the best Db level to set the system. View area is 10 feet from a big screen. It seems a db of -30 on master dial provides ample volume however when turner it first turned on the setting is always -75db. The test speaker settings is +10db to -10db. Any help how to set to a normal setting. Have no clue how to relate a -30db to what I thought is normal hearing db i.e. +50 or +80. What am I missing...
